Vegan Sugar free Banana Flan


I am vegan but I eat eggs that have not been fertilised, so eggs show up in the recipes I create.



For this flan you will need


1 cup almond flour or ground almonds
2 free range eggs
1 cup dates
1/2 cup water
3 ripe bananas

snip of vanilla pod



In a blender put the dates, vanilla and the water and make a paste

then add the almonds and the eggs

Cut the bananas and place them onto the flan dish and then top with the mixture


Pop into oven 180 for 20 minutes, leave in the oven while hot for a further 10 minutes (don't open door) flan is still cooking in this moderate heat






Serve with cashew cream

1 cup soaked cashews
1/2" piece vanilla
1/4 cup maple syrup
1/4 cup water

Put the above in a high speed blender until smooth and creamy, no lumps!
